Is it possible to do planetary imaging with Ekos, using an ASI120mc camera, or any planetary camera for that matter...

I described a procedure in another thread for the Moon that should suit your needs. Basically focus and plate-solve stars around the location of the planet, align to planet coordinates, then use flat automatic calibration to obtain proper exposure duration. But that might be automation overkill compared to a manual procedure :)

So the software will allow video files to be taken then, either AVI or SER...? And there is a manual way to alter gain, exposure etc....?

You can record SER & OGV. With ASI, you can control gain & exposure.
